• 1 lime
  • 3 egg yolk
  • 2 teaspoons Dijon style mustard
  • 4 cloves garlic
  • 2 tablespoons lime juice
  • 2 teaspoons salt
  • 1 cup olive oil


  1. Zest one lime and reserve zest for later use.
  2. Place egg yolks, Dijon mustard, garlic, lime juice and salt into blender jug and dial to MIX setting for 30 seconds.
  3. While blender is still running slowly drizzle olive oil through the removable blender cap until thick.
  4. Add zest from lime and dial to STIR.
  5. Remove aioli and serve with Salt & Pepper Squid or favorite seafood dish.
