As Halloween rolls around, you may be thinking jack-o’-lanterns. As 1.5 billion pounds of pumpkins are sold every year, most for decorative use, teach the kids a delicious conservation lesson with these delightful pepitas. Don’t just carve it out and throw it out — eat it too. Get the kids involved in their own food production.  Don’t overlook this salty snack.

Pumpkin seeds are a great snack, and you can fill your kids up a little before they devour all that candy. If you have any leftover seeds, they also make a protein-rich alternative to croutons for your salads. The flesh can be used for pie, pancakes, or as a sweet and savory side dish.

Pumpkin Seeds

Ingredients

  • 1 cup raw pumpkin seeds

Instructions

  1. Spread the pumpkin seeds onto the nonstick pizza pan.
  2. Set the wire rack in the middle rack height position and turn the function dial until the indicator on the LCD screen points to the TOAST function. Select #2 darkness, and set to #1 slice.
  3. Press START/CANCEL button to activate. The pumpkin seeds will make popping sounds near the end of the toasting time.
  4. Allow pumpkin seeds to cool before serving.
