Twenty-eight years ago, he opened Gotham Bar & Grill.It continues to impress diners from around the world with food that is refined, subtle, and beautiful to look at.
What makes Alfred a rarity is his desire to focus on his one restaurant. Although in the past few years he has opened a couple of smaller ventures in other cities, Gotham remains his baby. Most chefs of his caliber are emperors of vast numbers of properties. Alfred remains the king of one.

What inspires him to commit to this strategy? What makes him different? Could it be his focus? I met Alfred on a trip to Tokyo a few years ago, and started a conversation that continues today.
