Ingredients
- 2 cans black beans, drained and rinsed
- 1 onion chopped
- 1 tomato chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/4 teaspoon ground thyme
- 1 can chicken broth
- 1 cup diced ham
- 1 avocado, diced
- Grated cheese
- Cilantro
Instructions
- Sauté the onion in a little bit of olive oil until translucent. Add in the cumin, chili powder, garlic powder and thyme and sauté again for 1 minute more. Add chopped tomato, black beans and chicken broth. Bring to a boil then reduce the heat and simmer for about 15 minutes.
- Using an immersion blender, purée the soup in batched and once smooth, add in the diced ham.
- Serve in bowls and garnish with the diced avocado, cheese and cilantro.
