Ingredients

  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 Spanish onion, diced
  • 2 cloves garlic, crushed
  • 1 teaspoon lightly crushed cardamom seeds
  • 1 teaspoon ground cumin
  • Freshly ground black pepper
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1 bay leaf
  • 2 1/2 cups Basmati rice, washed
  • 6 cups chicken stock
  • 1/2 cup shelled pistachio nuts, finely chopped
  • 3 1/2 ounces chopped dried apricots
  • 3 1/2 ounces chopped dried figs
  • 2 tablespoons chopped fresh coriander

Instructions

  1. Place butter, oil, onion, garlic, spices and rice into the removable cooking bowl. Press the selector control to Cook and cook for 5 minutes, stirring constantly to coat everything with the oil. Add in the stock and cover with the lid. Continue the cooking until the selector switched to Keep Warm, stirring one time during the cooking process. Once done, stir the rice mixture and fold the nuts, apricots, figs, and coriander into the rice then let stand for 10 minutes on the Keep Warm function before serving.
