Pomegranate Syrup Ingredients

• 1 cup (250ml) sugar
• 1 cup (250ml) pomegranate fresh juice (about 3 whole pomegranates)
• 2 tablespoon citrus juice

Daiquiris Ingredients

• 8 fresh strawberries
• 6 fresh raspberries
• 1 tablespoon (15ml) white rum
• 1 tablespoon (15ml) Cointreau
• 1 tablespoon (15ml) Créme de Cassis
• 1 cup ice

Instructions

Pomegranate Syrup

1. Using the Breville Citrus Press, extract juice from pomegranate as you would with an orange, cut the pomegranate in half by cutting across the tip ends

2. In a medium saucepan, mix sugar, pomegranate juice and citrus juice, bring to a boil and let simmer for 15 minutes or until it becomes thick and syrupy. Do not stop stirring.

3. Allow to cool, and set it aside.

Daiquiris

1. Place strawberries, raspberries, white rum, Cointreau, Crème de Cassis into blender jug, close lid. Use speed 2, purée until smooth.

2. In the bottom of 2 martini glasses, put in 1 tablespoon (15ml) of pomegranate syrup, pour the Daiquiri mixture into the glass.

3. Decorate the glass with a strawberry.
