Turn that Olive Bar into a Meal

I would never consider myself a trendsetter. In fact, I’m much more like a career trend watcher. As such, there’s something I noticed today at my local supermarket — the Mediterranean olive bar.
They have these things everywhere now and it goes well beyond just olives. The one near me is about 25 feet long and includes fresh cheeses, mushrooms, marinated vegetables, and more.
Now, the offerings at your local Mediterranean olive bar may vary slightly, or even greatly. But what I love about the olive bar as it relates to this sandwich, is that just about anything is going to be delicious.

Quick Mediterranean Wrap
Ideally, you have a Mediterranean olive bar in a food store near your home. Select these ingredients or others that catch your eye, and assemble them at your grill.
Quick Mediterranean Wrap
Ingredients
- 2 tablespoons hummus
- 2 sandwich wraps of your choice (flour, tomato, spinach, anything will do)
- 2 tablespoons feta & olive salad
- 2 tablespoons artichoke & pepperoncini
- 2 tablespoons garlic & red pepper
- 2-4 slices sundried tomato
- olive oil (if necessary)
Instructions
- Heat a grill pan or sandwich press to a medium-high heat.
- Spread a tablespoon of hummus on each wrap.
- Split the rest of the ingredients between the two wraps as well.
- Roll the wraps.
- For an extra crispy wrap, cover with a thin layer of olive oil.
- Cook until golden, crisp, and heated through. Approximately 6 minutes.
